The slow maturation produces beans with high density and complexity of flavour.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eThe Ayla Washing station, where these beans are processed using the natural method, sources coffee cherries from 375 to 725 smallhold farmers. Natural processing involves drying the cherries in the sun with the mucilage fully intact, and turning the beans regularly to ensure an even result.
